Step 1
Preheat the oven to 200 °C fan (220 °C conventional). Tip the cherry tomatoes and unpeeled garlic cloves into a large, deep baking dish. Drizzle with 3 tbsp olive oil, scatter over the chilli flakes, season generously, and toss to coat.
Step 2
Place the block of feta in the centre of the tomatoes. Drizzle with the remaining 1 tbsp of olive oil. Roast for 30–35 minutes until the tomatoes have burst and caramelised at the edges and the feta is lightly golden and very soft.
Step 3
While the feta roasts, cook the rigatoni in well-salted boiling water until al dente. Reserve 200 ml of starchy pasta water before draining.
Step 4
Remove the dish from the oven. Squeeze the softened garlic out of their skins into the dish and discard the papery skins. Use a fork to crush and stir the feta and tomatoes together into a rough, creamy, bright-orange sauce.
Step 5
Add the drained pasta and toss well, splashing in pasta water a little at a time until the sauce clings to every piece. Tear over the fresh basil, taste for seasoning, and serve immediately straight from the baking dish.
Use a 200 g block of full-fat feta, not pre-crumbled — it melts far more luxuriously. Add a generous pinch of chilli flakes before roasting. Stir through a large handful of fresh basil just before serving.
