Step 1
Pat chicken thighs completely dry and season with salt and pepper. Dust lightly with cornstarch for crisp edges.
Step 2
Heat oil in a large skillet over medium-high heat. Place chicken smooth side down and sear without moving until deeply golden.
Step 3
Flip and cook second side until nearly cooked through.
Step 4
Remove chicken briefly. Add sliced garlic to the same pan and cook 30 seconds.
Step 5
Add honey, soy sauce, vinegar, butter and chili flakes and stir to form glaze.
Step 6
Return chicken and coat thoroughly in the simmering sauce.
Step 7
Cook until glaze thickens and coats the chicken evenly.
Step 8
Slice or serve whole and finish with chopped spring onions.
Reduce sauce until glossy. Spoon extra glaze over chicken before serving.
