Step 1
Rinse lentils well and set aside.
Step 2
Saute onion and carrots in oil until softened.
Step 3
Add garlic and cumin; cook until fragrant.
Step 4
Add lentils and stock; bring to a boil.
Step 5
Reduce heat and simmer until lentils are very soft.
Step 6
Blend part of the soup for a creamier consistency.
Step 7
Stir in lemon juice and adjust salt/pepper.
Step 8
Serve hot with herbs, yogurt, or bread.
Blend partially for texture.
