Step 1

Whisk matcha powder with hot water until smooth then mix with milk and cool.

Step 2

Whip mascarpone, cream and sugar until soft peaks form.

Step 3

Dip ladyfinger biscuits quickly into matcha mixture.

Step 4

Layer soaked biscuits into serving glasses.

Step 5

Top with mascarpone cream and repeat layers.

Step 6

Chill briefly before serving and dust with extra matcha powder.

Chef Notes

Use cooled tea to soak biscuits so they hold their shape.
