Step 1

Drain beans and chickpeas and dry thoroughly with paper towels.

Step 2

Blend yogurt, olive oil, lemon juice, garlic, Dijon, parsley, basil and spinach into a smooth green dressing.

Step 3

Place beans in a large bowl and toss with most of the dressing.

Step 4

Dice cucumber and add to bowl along with chopped spinach.

Step 5

Gently fold diced avocado into salad just before serving.

Step 6

Transfer to platter and drizzle remaining dressing on top.

Chef Notes

Dry beans well so dressing sticks properly.
