Step 1
Combine yogurt, garlic, ginger, and spices; coat chicken and marinate 30+ minutes.
Step 2
Sear chicken in batches over medium-high heat until lightly charred.
Step 3
Saute onion in the same pan until soft and golden.
Step 4
Add garlic/ginger and spices; cook briefly until fragrant.
Step 5
Add passata and simmer until sauce thickens and darkens slightly.
Step 6
Return chicken and juices; simmer until chicken is fully cooked.
Step 7
Stir in cream and simmer 2-3 minutes; adjust salt.
Step 8
Finish with herbs and serve with rice or naan.
Marinate longer for better flavor.
