Step 1
Preheat oven to 175C and line a loaf pan with parchment.

Mash bananas and whisk with sugar, eggs, butter, and vanilla.
Step 3
In a second bowl, combine flour, baking soda, cinnamon, and salt.
Step 4
Fold dry mixture into wet until just combined.
Step 5
Pour batter into pan and smooth the top.
Step 6
Bake 50-60 minutes until skewer comes out mostly clean.
Step 7
Cool in pan 10-15 minutes before lifting out.
Step 8
Cool fully on a rack before slicing for best texture.
Use very ripe bananas.
