Step 1
Heat oil in a wide skillet; cook onion and pepper until softened.

Add garlic, cumin, and paprika; stir 30-60 seconds.
Step 3
Add tomatoes and season with salt/pepper.
Step 4
Simmer sauce until thick enough to hold small wells.
Step 5
Make wells with a spoon and crack eggs into each well.
Step 6
Cover and cook on low until whites set, yolks still soft.
Step 7
Taste sauce and adjust seasoning or heat level.
Step 8
Garnish with herbs/feta and serve with warm bread.
Cover to set whites quickly.
